pandan butter cake
300 gm cake flour
1 tsp baking powder
100ml coconut milk
1 tsp pandan paste (I used homemade pandan paste)
pinch of salt (if using unsalted butter)
1. Sieved together in a large bowl; cake flour and baking soda.
2. Cream butter and sugar till creamy.
3. Add in egg one at a time and make sure it's properly mixed before adding in another egg. Pour in coconut milk (and salt) slowly and if it cuddles, put in some flour. Add in pandan paste and continue mixing untill the color is well blended.
4. Fold in cake flour and baking powder and then pour into a 8" sq. tray. Baked at 180C for about 40-60 mins. (depending to your oven)
