moist mocha cake


recipe from cookingwithmarinamustafa


Ingredients:
1 1/2 cups sugar
1/2 cup butter
2 eggs

Ingredients to sieve together:
1 1/2 cups plain flour
1/4 tsp baking powder
1 tsp bicarbonate of soda

Ingredients to dilute & mix together:
1/2 cup cocoa
2 tbsp instant coffee
3/4 cup boiling water

Method:
1. Cream the butter & sugar till white and fluffy.
2. Put in the eggs, one at a time.
3. Fold in the flour, alternately with the cocoa & coffee mixture. Beginning and ending with flour.
4. Pour into a 12" greased cake tin. Put in a pre-heated 180º C oven for about 1 hour 25 minutes.
5. Allow to cook on a wire rack.
6. When cool, spread the icing over the cake. Decorate as desired

Mocha Fudge Icing:
2 tbsp butter
2 tbsp milk
1 tbsp instant coffee powder
1 tbsp cocoa powder
1 1/2 cups icing sugar

Method for Icing
1. Melt the butter, milk, coffee powder and cocoa powder in a pan.
2. Remove from flame and allow to cool.
3. Add the icing sugar, beat till smooth and shiny.
4. Spread over cake.

telur dadar mayonis

resepi dari unilever


Bahan-bahan
1 1/2 sudu besar mayonis lady's choice real moyonaisse
6 tangkai daun ketumbar di cincang halus
1 bawang besar di cincang
1 cili merah di cincang
4 biji telur di pukul perlahan
garam secukup rasa

Cara-caranya:
1. Pukul telur perlahan-lahan bersama mayonis, masukkan daun ketumbar, bawang dan cili cincang. Perasakan dengan garam dan lada.
2. Panaskan kuali dengan 1 sudu besar minyak. Apabila minyak agak panas tuangkan adunan telur. Apabila telur mula terbentuk/separuh masak, terbalikkan telur dan terus masak sehingga telur terbentuk sepenuhnya.
3. Gunakan api sederhana apabila anda memasak telur dadar untuk mengelakkan telur daripada hangus


nota: lemaaaaaaknya rasa dia, mual pulak!

agar-agar bandung cincau



Ingredients
1 packet agar-agar strip - soaked dan drain
800ml water
200gm sugar
250ml evaporated milk
1/2 cup rose syrup
1 cup grass jelly - diced

Method
Bring to boil water and agar-agar strip. Add in sugar. Stir untill sugar completely disolve.
Add in milk and rose syrup.
Sieve into desire mould.
Drop randomly the cube grass jelly into the agar-agar.
Let it set and cool in the refrigarator.

honey cornflakes cups


my sons's kindy is having literacy day this sunday. I prepared this snack for the after the show potluck party .
it’s really easy to prepare and tasty as a little snack! yield about 40cups

Ingredients :
40g butter
1 tbsp sugar
1 tbsp honey
2 cups corn flakes
raisins (optional)
colored sprinkle for decoration

Method:
Melt butter, sugar, honey in a non-stick pan over low heat till it’s all melted and the sugar has dissolved. Remove from heat.
Add in cornflakes, raisins and mix till well-coated.
Scoop mixture into mini baking cups.
Sprinkle over the colored sprinkles.
Bake at 170 for approximately 5 – 7 minutes. Remove and cool.

tempe goreng berempah


just a simple dish. goes well with sambal kicap or sambal belacan and white rice. it is just good as it is.

2 pieces of tempe. cut into smaller pieces. rub with meat curry powder & salt. deep fry until golden and crispy then add sliced onions and curry leaves. done!




jemput-jemput jagung

Bahan-bahan
3 tongkol jagung (ambil isi jagung)
1 labu bawang besar (dicincang)
3 biji cili merah (dicincang)
100 gm udang basah
1 biji telur
sedikit daun kucai (dipotong pendek)
2 cawan tepung gandum
1 sudu kecil serbuk penaik
1 cawan air suam
1 sudu kecil sebuk kunyit
garam secukup rasa
minyak untuk menggoreng

Cara-caranya
1. Jagung diambil isinya sahaja
2. Gaulkan semua bahan didalam mangkuk besar sehingga sebati
3. Panaskan minyak di dalam kuali dan masukkan adunan ke dalam kuali sedikit demi sedikit menggunakan sudu.
4. Goreng hingga kuning keemasan.
5. Angkat dan toskan minyak.
6. Hidangkan dengan cili sos

pengat pisang nangka & kurma


Ingredients
5 bananas (pisang nangka)
1/2 cup dates (buah kurma) seeds removed
3 cups coconut milk
4 tbs sugar
1 tbs gula merah
a pinch of salt
1 tbs sago (wash and toss)
pandan leaf - tied into a knot

Method
Cut the bananas into slices of about 3-5cm thickness, depending on the size of the bananas.
Place the bananas, sugar, gula merah and pandan leaf in a pot and add a cup of water.
Bring to boil until the sugar is dissolved or the banana has softened. Then add in the coconut milk.
Add a pinch of salt.  Let it simmer over low heat until the bananas are properly cooked.
Add sago and let it boil until sago is cooked or become transparent/clear.
Add kurma at the last minute before turning off the fire.
Serve hot or chilled.

nona fruit cake

i saw this cake on dayangjack's blog and decide to give it a try. went to Giant this morning and look for the flour but only Nona brand is available. just like dayang i added 2 table spoons of fresh milk and  instead of mix fruit I used only raisins. the rest just follow the intructions at the back of the box. the cake turned out well. the color is slightly brownish and it taste like a christmas fruit cake. not bad for a premix. happy trying!

puding roti





Bahan A
8g serbuk agar-agar
1/2 cawan gula
3 cawan air

Bahan B
4 keping roti
2 biji telur
1/2 cawan susu pekat manit
170ml susu cair
1/2 cawan air
2 sudu besar mentega
2 sudu besar serbuk koko
1 sudu teh pes pandan

Cara-cara

Didihkan semua bahan A hingga larut.
Kisar semua bahan B. Kemudian masukkan dalam periuk agar-agar yang sudah di didih tadi.
Masukkan mentega dan kacau rata sehingga mendidih dan matikan api.
Bahagi kepada dua adunan. Adunan pertama dicampurkan pes pandan dan kacau rata. Adunan kedua dimasukkan serbuk koko dan kacau rata.
Tuang ke dalam loyang secara berselang-seli. Satu senduk setiap adunan.
Proses ini hendaklah dilakukan dengan cepat kerana adunan puding cepat membeku.
Setelah siap bolehlah di simpan di alam peti sejuk sekurang-kurangnya selama sejam.
Enak dimakan ketika sejuk.

Budu ataupun nama orang putihnya anchovies sauce pun ada dalam Wikipedia dan dah ada sijil halal :)

to those who cannot live without budu, this sachet comes in handy. eazier to carry arround especially when travelling abroad. jangan kena tahan dengan kastam dah ;)
