agar-agar gula melaka

20g agar -agar strands (wash to soften)
150g palm sugar - chopped roughly
1 screw pine leaf - tied into a knot
5 cups water
220ml coconut milk
a pinch of salt

In a pot, add washed agar-agar strands, screw pine leaf, palm sugar and water to boil. Cook in simmer till the sugar and agar-agar dissolve in water and turn to a golden syrup. Give a stir occasionally.

Once the syrup is half from its original, remove from heat. Discard the screw pine leaf. Sieve the syrup into another pan. Place on heat again and add coconut. Simmer for 2-3 minutes before pouring on mould.

Let it cool in room temperature then place it refrigerator.
